Thai's Red Chicken Curry




For those who loved spicy dishes you may try my version of Thai’s Red Chicken Curry ;)
i love spicy food !
Ingredients:
3/4 kilo breast chicken fillet cut into bite size (we usually buy the ones from Magnolia chicken cuts at the grocery) or menudo cut chicken pieces
Thai Foods Red Curry Paste ( if you do not have Thai Foods Red Curry Paste you may try tomato paste and chili, sauce & curry powder mix , this is what I do at home )
red & green bell peppers ( julienned )
young corn
Paminta leaves
Fish sauce or patis ( or soy sauce will do )
spring onions
onion (chopped)
ginger ( julienned )
freshly squeezed coconut milk or 1 can of coconut milk
oil

Heat pan or wok, add some oil and saute’ onions, add chicken( sprinkle a dash of salt ) cook for a bit when the chicken meat turns white , add a dash of fish sauce and the ginger , cook for a bit till you can smell the heavenly scent of the fish sauce , add the red curry paste, be ready to add the coconut milk since the curry paste dries up pretty quick once added to the chicken, add the julienned red bell peppers and spring onions & your corn, let it simmer for a few minutes but do not over cook just to thicken the coconut milk ( you may add 1 egg to thicken the texture ) .

My Homemade Toasted Garlic Bread



6 slices of bread ( french or slice bread )
3/4 finely chopped garlic
1 cup butter
1 tsp vegetable oil ( olive oil is optional )
salt
Procedure :

Prepare bread into greased toaster pan
Saute garlic in oil in low heat  , sprinkle salt .
Add butter until it melts , don’t burn garlic just let it turn into light brown .
Brush bread with the butter garlic
Put into toaster for 3-5 minutes .
This goes well with pasta dishes or with coffee or both.
